The best DIY Chicken recipes – and they’re super healthy too!

With all the healthy living and eating, here are some boneless chicken recipes that you’ll absolutely love. They’re super easy to make and can be had for breakfast, lunch or dinner too if you like. The punch of protein will go a long way in helping you achieve your fitness goals.

Sweet and sour chicken

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients:

  • Cubed or thinly sliced Chicken breast pieces- 6-8

For the marinade:

  • Ginger and garlic paste or mince
  • Black pepper- 1 teaspoon
  • Lemon juice-1 tablespoon
  • Corn flour- 1 tablespoon made into a paste with water
  • Salt to taste

For the sauce:

  • Soy sauce- 2 tablespoon
  • Lemon juice- 1 tablespoon
  • Red chilly paste- 2 tablespoon
  • Ketchup- 1 or 2 tablespoons as per taste
  • Cubed green ,red and yellow bell peppers: 1 each
  • Spring onions- 4
  • Oil- 1 teaspoon
  • Salt to taste

Instructions:

  • Marinate the chicken with the marinade ingredients and leave for 30 minutes or overnight.
  • Take a deep wok and heat the oil.
  • Cut the white part of the spring onions and fry in the oil.
  • Add the marinated chicken with the onions and fry for a while till chicken is half cooked.
  • Next add bell peppers and continue tossing everything on a high flame.
  • Add the soy sauce, red chilly paste and ketchup.
  • Keep stirring and add lemon juice and turn off the gas.
  • Serve hot with rice or any bread of your choice.




Creamy mushroom chicken

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients:

  • Cubed or thinly sliced Chicken breast pieces- 6-8
  • Olive oil- 1 tablespoon
  • Mushrooms- 6-8 halved
  • Corn flour- 1 tablespoon
  • Garlic- 4 cloves crushed
  • Milk- 2 cups
  • Mixed dried herbs- 1 teaspoon
  • Black pepper- for seasoning
  • Onions- 2 medium size cut finely
  • Salt to taste

Instructions:

  • Heat half the oil in a deep pan and fry the garlic and onions till light brown.
  • Add mushrooms and chicken and gently sauté them till color changes.
  • Remove from the oil and keep aside.
  • In the same pan, add the remaining oil.
  • When hot, add the flour and stir quickly till it forms a paste.
  • Add milk slowly while stirring continuously.
  • Add pepper, mixed dried herbs and salt.
  • After it has formed into thick sauce- like consistency, add the mushroom, chicken and onions which were kept aside.
  • Cook for another 5 minutes and turn off gas.
  • Serve hot with bread of your choice.




Chicken and slaw sandwich

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients:

Thinly sliced Chicken breast pieces- 2- 4

For the slaw:

  • Shredded red cabbage- 1 cup
  • Sliced red onion- 1 medium size
  • Hung curd- 1 cup
  • Black pepper- 1 teaspoon
  • Salt to taste

For the marinade:

  • Olive oil- 1 teaspoon
  • Ginger- garlic paste- 1 teaspoon
  • Green Chilly-mint and Cilantro paste- 1 tablespoon
  • Lemon juice- 1 teaspoon

Instructions:

  • Mix all the ingredients for the slaw, cover and chill in the refrigerator.
  • Marinate the chicken and keep it for 30 minutes or overnight for extra tenderness.
  • Heat oil on a grill pan.
  • When smoking hot, add the chicken slices and press down firmly with a spoon.
  • Cover and repeat the process when one side is done.
  • Drizzle them with lemon juice.
  • Take a slice of bread or loaf and arrange the slaw and top it with the chicken slice.
  • You can serve it as an open club sandwich or as a lightly toasted one.
  • Add your favorite sauce or nutritious avocado while serving it.
